How do I set the timeline calendar to reflect that, as opposed to defaulting to the present day?

I think there’s more than one way to do this. Here’s one idea.
If you click the down arrow on the bottom status bar where it probably now says “infinite scroll,” you can set the date range you want to be able to scroll through.

For ongoing calculations, you can also override the current date in Settings.
Click the “For ongoing item calculations, override current date/time with:” and then set the date of what you wish to be the “current date”.
Are there other aspects of the timeline that are defaulting to the present day that you would like to change?
